Justo después de que el Reino Unido votara a favor de dejar la Unión Europea, en las ciudades británicas aparecieron carteles anunciando “las patatas son inmigrantes”. Acompañaba al texto el dibujo de un alegre montón de patatas fritas, junto a uno de esos tenedores desechables. Poco después, en los Estados Unidos aparecieron otras versiones de la imagen. El diseño del póster, obra de Mia Frostner y Rosalie Schweiker, nos recuerda que esta comida tan “británica” es originaria de un lugar muy lejano. Como en tantos otros lugares donde se consume hoy en día, los orígenes andinos de la patata se han olvidado. La historia global de los viajes de la patata desde los Andes al resto del mundo es una historia de colonización, conflicto e innovación local, condensada en un pequeño bocado mundano.
